Chipotle Pineapple Pork Chops

These pork chops are super easy and take less than 10 minutes in the skillet. For a paleo and dairy free version, use coconut milk instead of regular milk for the sauce. They are also gluten free! Even using dairy milk, you have a chipotle and cilantro pork chop that goes perfectly with a side of cilantro lime rice and your favorite vegetable for a healthy, well rounded meal! Korean Pork Chops & Spicy Roasted Bok Choy

So I go through these phases of cravings. I’m assuming that’s normal? One week I crave Mexican food. One week I’ll crave Italian food. The next week seafood. This week, Asian food! On Monday night I threw together some ham and pineapple fried rice. Then last night I threw together this dish. Turtle was very curious about the bok choy, he said it tasted “really Asian.” I think what he meant by that was that you can really taste the sesame flavor from the oil and seeds. It was an easy and healthy side roasted in the oven in just 6 minutes. The pork was just as effortless and only took about 15 minutes. If you’re looking for a new pork chop recipe, or for an Asian inspired dish, I highly reccomend you try this one!

Baked Pork Chops with Roasted Jalapeño Corn

I recently received my first big girl job bonus so we celebrated by having a relaxing and semi fancy dinner at Rye Craft Food & Drinks in downtown McKinney, Texas. The pork tenderloin and charred jalapeño corn we had was so remarkable I attempted to recreate something similar at home. This meal was made under $15 for the two of us and in under 25 minutes.
